This thesis splits in two parts. First, it aims to study moduli spaces of coherent sheaves on a Fano threefold X and on a K3 hyperplane section S of X. We show that the restriction of sheaves from X to S describes a rational fibration between the corresponding moduli spaces of sheaves MX and MS. We extend this fibration to a Lagrangian fibration on another birational model M of MS. Finally, we study all models of MS and we deduce a description of the birational transformation between MS and M. Secondly, this thesis adresses the study of dynamical systems in a categorical point of view. We focus on the case of the derived category Db(S) of a smooth projective surface S. On the one hand, we exhibit a new example for which categorical and topological entropies do not coincide. On the other hand, we define the notion of generalized topological entropy, and we study, under mild assumptions, the values that the latter can take. Combined with the celebrated Cantat result, we deduce a first result concerning the classification of surfaces admitting an auto-equivalence with nontrivial entropy.
